Would it be possible to install GiD on a pendrive and use it as a "portable" software?

Off course it it possible.
GiD is really portable: you can simply do a copy of the GiD folder in your memory stick (or install it on the memory stick)
and to be professional use a USB licence for this memory stick.

Then you can run the copy of the memory stick, or do a copy in the hard drive, the licence in both cases will be allowed from the memory stick (off course must be plugged)

Note: a drawback of directly run the copy of the memory stick is that usually this device is slower than a hard disk, then the start could be a little slower.
